Candy's Queso

·               1 lb velveeta cheese
·               1/2 lb bulk sausage
·               1 small onion chopped
·               2 cloves garlic chopped
·               1 small tomato, diced
·               2 scallions, chopped
·               1 small can chopped green chiles
·               1 fresh jalapeno seeded and diced
·               1 can Rotel tomatoes [see note ]
·               1/2 ripe avocado diced
·               cilantro chopped
 
1.                   Saute sausage until cooked through.  Add onions and garlic and saute until onions are translucent.
2.                   Cut velveeta into squares and put into a microwave proof casserole dish.
3.                   Add sausage mix and rest of ingredients to cheese.  Don't stir.
4.                   Put the covered casserole dish into the microwave at half power for about 6 minutes.  
5.                   Take out and stir the slightly melted mixture.  Continue cooking at half power until mixture is completely melted.
 
Serve with tortilla chips.  Your friends will eat this until they are literally sick.
 
Note - If queso starts to harden, pop back in the microwave at half power until melted - repeat as necessary. 
Rotel is a brand name.  They are canned tomatoes that are mixed with some spices and peppers.  They have them in most grocery stores.  
I've tried the queso with regular canned tomatoes and you can definitely tell the difference.
