Uncle Jay makes this for the 4th of July family reunion when everybody comes back to the farm.  
 
He uses a beer keg with the top cut off and an open fire or propane cooker.  It’s a winner.
 
·              Ham Hocks
·              Lamb Shanks
·              Andouille Sausage
·              Potatoes
·              Carrots
·              Cabbage or Collards or Kale
·              Onions
·              Garlic
·              Sage
·              Thyme
·              Salt and Pepper
 
1.                  Boil it up!
2.                  Add the sausages later because they don’t really benefit from cooking so long.
3.                  The hocks and shanks should simmer for at least 3 hours.
