Donny Rumsfeld’s Flank Steak Salad

Donald Rumsfeld, U.S. Secretary of Defense and someone the Clipper doesn’t care for so much

 

 
I developed this salad while I was a congressman in Illinois.  However incompetent I am as a Defense Secretary, 
you will have to admit that this is the best salad you ever had.  It serves 4.
 
·              1 lb flank steak, trimmed
·              paprika
·              salt and pepper
·              crushed red pepper
          --------------------------------------
·              2 bunches watercress, stemmed
·              4 roma tomatoes, diced
·              1/2 red onion, chopped
·              1 large cuccumber, diced
          ---------------------------------------
·              1 cup olive oil
·              1/4 cup lemon juice
·              3 T mustard
·              1 t soy sauce
·              pepper
 
1.     Mix the salad ingredients.  
2.     Rub the steak with the seasoning and grill the steak medium rare.  
3.     Mix the dressing ingredients by adding the oil to the other stuff slowly while whisking.  This will blend the dressing into an even mixture.  
4.     Toss the salad in the dressing and serve the steak sliced over the salad.
